How to Prepare the Perfect Tea
by Mr. Shaun Gough

Loose Tea

To prepare the perfect cup of tea from loose tea leaves, a porcelain, silver or stainless steel tea pot should be used.
Follow the steps below and you will enrich your tea drinking experience, with a good cup every time;

  • If any pre-boiled water is retained in the kettle, please drain it of before pouring fresh water into the kettle.
  • Rinse out the pot with hot water
  • Put one teaspoonful of tea into the pot for each person and ‘one for the pot’
  • Pour boiling water onto the tea leave in the teapot (see guidelines on boiling water below for various types of tea), and put the lid on.
  • Stir it after 2 minutes
  • Brew it for at least 3 minutes but not more than 5 minutes
  • Pour tea into cups with a strainer
  • Add sugar, milk or lemon if desired.
  • Always make sure you store tea in a cool dry environment away from direct sunlight and apart from other strong smelling substances, as tea will easily taint.
  • Storage at below 25oC and around or below 60% RH is recommended if possible.

Tea is considered a low risk food product and can be safely stored and consumed within the recommended shelf life indications on the retail pack, but for optimal results should be consumed as soon after purchase as possible.

Guidelines for Boiling water

For Black Tea: Boil the water till it reaches boiling temperature on a rolling boil (100 oC).The Chinese call this stage “Raging Torrent”.
For Green and Oolong Tea: Water is best at around 90oC or when you see a constant line of small bubbles coming from the bottom of the kettle(the Chinese call this “pearl strings”).
For White tea and some delicate Green teas: Take the water when you see small bubbles first forming and clinging to the bottom of the kettle (the Chinese call this stage “fish eyes”).
